Fennel - Smokey Bronze (Foeniculum vulgare var. purpurascens)

Description:

Bronze fennel is a variety of fennel valued for its attractive bronze foliage and culinary uses. It is a perennial herb that belongs to the Apiaceae family. It is a visually striking herb that grows up to 3 to 5 feet (0.9 to 1.5m) in height, featuring feathery, deeply divided leaves that possess a unique smokey bronze or purplish-bronze colour. The leaves are aromatic and have a delicate, anise-like flavour. Bronze fennel produces umbels of small yellow flowers that are attractive to beneficial insects like bees and butterflies. The flowers later develop into seeds that are commonly used for culinary and medicinal applications.

Growing Conditions:

  • Climate: cool-temperate; prefers mild summers and cool winters.

  • Position: full sun to part shade with at least 6 to 8 hours of direct sunlight per day; providing some afternoon shade can help protect the plant from scorching in hotter environments.

  • Soil: well-draining, rich, fertile, sandy or loamy soil; ideal soil pH range is slightly acidic to neutral (around 6.0 to 7.0).

  • Water: moderate water needs; water the plant regularly to keep the soil consistently moist but not waterlogged; drought-tolerant once established.

  • Spacing: space the plants approximately 12 to 18 inches (30 to 45 cm) apart to allow them room to develop.

  • Propagation: sow the seeds directly into the garden bed or seed flats/pots in spring after the last frost date; lightly cover the seeds with soil, as they require some light for germination (usually occurs within 7 to 14 days).

  • Harvest:

    • Leaves: harvest the young, tender leaves throughout the growing season. Select leaves individually or cut entire stems close to the base of the plant. The leaves can be used fresh or dried for later use.

    • Seeds: allow the flowers to fully mature and go to seed. Carefully cut the flower heads holding the seeds, and place them in a paper bag upside down. Keep the bag semi-open in a well-ventilated area to allow the seeds to fully dry. Once dried, gently crush the flower heads to release the seeds. The aromatic seeds can be used for culinary purposes or for seed-saving.
