Sage, Garden (Salvia officinalis)

Description:

Common or garden sage is a hardy perennial herb, belonging to the Lamiaceae family, known for its aromatic leaves and culinary & medicinal uses. Sage is a small evergreen shrub with a dense, bushy growth habit native to Germany, through to southern Europe and the Balkan Peninsula. It typically reaches a height of 1 to 3 feet (30 to 90cm) and has woody stems, producing small, tubular, pale purple-blue coloured flowers. The oblong, lance-shaped leaves are grey-green and covered with fine hairs and slightly wrinkled texture.

Growing Conditions:

  • Climate: cool-temperate but adaptable.

  • Position: full sun exposure with at least 6 to 8 hours a day; can tolerate some shade, but prefers bright, direct sunlight for optimal growth.

  • Soil: well-draining, moderately fertile soil although can grow well in sandy, loamy, or rocky soil types; ideal soil pH should be slightly acidic to neutral, ranging from 6.0 to 7.5.

  • Water: moderate water needs; water the plant deeply but infrequently, allowing the soil to dry out slightly between waterings; drought-tolerant once established and prefers slightly dry conditions.

  • Spacing: space the plants approximately 18 to 24 inches (45 to 60cm) apart

  • Propagation: sow seed in a seed flat or pot in a greenhouse or cold-frame for best results (alternatively outside after last frost). Lightly cover the seed with soil and tamp securely, keeping moist until germination (approx. 10 to 21 days). Thin seedlings out into individual pots after second set of true leaves form. Transplant into the garden or into larger pot in the first season.

  • Harvest: harvest leaves as needed once the plant has reached a height of about 6 to 8 inches (15 to 20cm) throughout the growing season. Avoid removing more than one-third of the foliage at a time to ensure continued growth.
